- Place the chicken on a sheet pan on top of 8 cloves of garlic. Sprinkle with salt and pepper. Roast for 35 to 40 minutes, until the chicken is cooked. Set aside until cool enough to handle. Dice the chicken into large bite-size pieces.
- Combine the chicken with enough Mayonnaise to moisten well. Add celery, scallions, and raisins, and Slivered almonds, and mix well.
