NYT: Cauliflower is an excellent blank canvas. You can steam or blanch it to keep its essential flavors intact, but by roasting or sautéing it, you can bring out its sweetness.

Higher oven temps work well if you want to brown the cauliflower, but it can get pretty smokey.

Directions: 
  1. Preheat oven to 375-400
  2. Remove base of stem and any green leaves
  3. In cast iron pan, drizzle olive oil generously over entire head, including inside. Spread olive oil with hands
  4. Salt and pepper to taste
  5. Bake for 1 to 1.5 hours at 375-400. Check at about 50 minutes.
  6. Remove from oven, slice and serve
