Using a small bowl or 4 cup measure set on a scale combine the honey, oat milk, egg, and oil. Whisk until combined. Add the oats and cornmeal.
Add the two flours on top of the liquids, make a small divot and add salt, baking soda, baking powder giving them a slight spoon mix as dry ingredients before whisking lightly into the liquids. A stainless strainer set above the liquids to mix the dry ingredients can be nice.
Break pecans into pieces. Cut the banana and strawberry to the size of the blueberries and add them to the mix. Incorporate everything but do not overmix.
Use a 1/4 cup measure to drop pancakes onto a hot skillet (about 4" inch pancakes). Flip pancakes when the bubbles are rising and just starting to break through the surface. Adjust heat for golden brown.
